RED CURRANT CAKE

The cake is as simple as it is called – Stir together the cake in the saucepan in which you melt the butter.

INGREDIENTS
100 g butter or margarine
2 eggs
2 dl sugar
2 dl wheat flour
1 teaspoon baking powder
2 teaspoons vanilla sugar
3 dl berries (today I used red currants from the freezer)

INSTRUCTIONS

1, Preheat the oven to 200C.

2, Grease a loose bottomed cake tin, and add some breadcrumbs. Shake them around so that you cover all the sides and the buttom with the breadcrumbs.

3, Melt the butter in a pan at low heat.

4, Remove from the heating source and add egg, sugar, vanilla sugar, baking powder and flour. Mix until well blended.

5, Put the mixture into your prepared tin.

6, Put all of the rinsed berries on top of the cake.

7, Bake in the middle of the oven for 20-25 minutes.
